Peach cobbler
We recommend trying your hand at making peach cobbler. This dessert is quite popular in America’s southern states and we can definitely see why!
Serves 4
Gluten-free, Dairy-free, Refined sugar-free
Ingredients
6 peaches, sliced
1/4 cup organic maple syrup
1 tablespoon arrowroot powder
1/2 teaspoon cinnamon
1/4 cup coconut yoghurt
Cobbler
1 cup GF plain flour
3/4 cup almond flour
1 teaspoon baking powder
1/4 cup monk fruit
Pinch of salt
1 egg
1/4 cup Nuttelex butter
1/4 cup soy milk
Method
1. Preheat oven to 200ºC.
2. In a small bowl, combine maple syrup, arrowroot and cinnamon. Add in peaches and coat them well with the mixture.
3. Place peach mixture in an 8x8 inch baking tray and put in the oven to crisp for 10 minutes.
4. In another bowl, add plain flour, almond flour, baking powder, monk fruit and salt. Whisk well. Add egg and butter and whisk again. You can use your hands to help combine until you have a crumby mixture.
5. Form 6 patties with the cobbler dough and place over the peach filling.
6. Bake cobbler in the oven for 25 minutes or until cobbler biscuits are golden and peach filling is bubbling.
7. Divide among 4 serving bowls and serve with 1 tablespoon of coconut yoghurt.
